Sazerac Cocktail #1

Absinthe
1 Sugar cube
3 dashes Peychaud's bitters
2 dashes Angostura bitters
2 oz rye whiskey
lemon peel

Rinse a chilled rocks glass with absinthe, discarding any excess (into your mouth!) and set glass aside. In a mixing glass, muddle the sugar cube and both bitters. Add the rye, fill with ice and stir. Strain into the prepared glass. Twist a slice of lemon peel over the top to extract the oils and then discard.

Sazerac Cocktail #2
(simple version)

2 oz Rye
2 dashes bitters
Absinth
Shake with cracked ice, strain into chilled Cocktail glass which has been rinsed with absinth, serve with lemon Twist.
